Happy Halloween!! This time of year has been CRAZY! With my new business, London Peach, taking off, SteamCon and Halloween, I feel like I haven't stopped to just take a breath. So today I decided that Peaches and I would bake some pumpkins the way my dad use to. It is so simple and easy with a delicious result.
Now don't those look yummy?!
So you can make as many or as few as you want so I am going to do this per pumpkin.
You will need:
1 mini pumpkin
1 t Butter
1/2 t Brown Sugar
1/2 t Honey
A couple pinches of Cinnamon

First you need to clean out each pumpkin. Cut the top off as if you were carving it then scrape the seeds and gunk out.
Then all you have to do is add in all the ingredients into one pumpkin.
Bake at 375°F for 45 min with a little water at the bottom of the pan.
And that's it! Let them cool for a bit but then eat them warm and enjoy. My kids think these are so fun to eat.
P.S. A mommy moment.
